Description

GitHub marks only one release in a repo as "Latest", and every releases/latest/download/<file>.zip URL resolves to that release. Because this repo releases several plugins, those links only work for whichever plugin release-please published last. After the #852 release, releases/latest points at wpgraphql-logging-wordpress-plugin-1.0.2, so the HWP Previews README link returns a 404.

This PR:

• Points the HWP Previews and WPGraphQL Logging READMEs, and the logging tutorial, at each plugin's filtered releases page (releases?q=<component>), which lists only that plugin's releases, newest first.
• Pins the wpgraphql-logging-nextjs example's .wp-env.json to the 1.0.2 release asset, the same way the hwp-previews examples pin their plugin version.
